Ingredients
o 1.5 pounds boneless, skinless chicken breasts
o 1 pound fettuccine pasta (or other long pasta like linguine, penne, or rigatoni)
o 2 cups heavy cream
o ½ cup unsalted butter
o 3-4 cloves garlic, minced
o 1 cup freshly grated Parmesan cheese
o 2 tablespoons olive oil
o Salt and black pepper, to taste
o 1 teaspoon dried Italian herbs (or blend of oregano, basil, and thyme)
o ½ teaspoon garlic powder
o Pinch red pepper flakes (optional)
o Fresh parsley, for garnish
o ½ cup shredded mozzarella (optional)
o ½ cup of pasta water
Instructions
o Pat chicken breasts dry and cut in half horizontally. Season with salt, pepper, and half the Italian herbs.
o Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
o In the same skillet, melt butter over medium-low heat. Add minced garlic and cook for 1 minute until fragrant.
o Slowly pour in heavy cream, whisking constantly. Cook over low heat, stirring occasionally, until slightly thickened (5-7 minutes).
o Remove pan from heat and slowly whisk in Parmesan cheese until melted and smooth.
o Season with remaining Italian herbs, garlic powder, red pepper flakes (if using), salt, and pepper to taste.
o Meanwhile, cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
o Add drained pasta to the skillet with the Alfredo sauce. Toss to coat. If the sauce is too thick, add pasta water gradually until desired consistency.
o Add chicken back to the skillet along with any accumulated juices.
o Stir in shredded mozzarella (if using) until melted.
o Sprinkle with fresh parsley and serve immediately.
