- Cabbage

Instructions
- Prepare the Vegetables: Wash, chop, and salt the vegetables. Let sit for 3-4 hours, then rinse and drain.
- Create the Pickling Mixture: Combine vinegar, sugar, and water in a large pot. Add spices and bring to a boil.
- Combine Vegetables and Brine: Add the drained vegetables to the brine and simmer until slightly softened.
- Prepare Jars: Sterilize jars and lids.
- Fill Jars: Pack the hot relish into prepared jars leaving ½ inch headspace. Ensure brine covers the vegetables.
- Seal the Jars: Wipe jar rims, secure lids, and process in a boiling water bath for 10-15 minutes.
- Cool and Store: Remove jars, let cool and then store in a cool dark place.
