Description

Ingredients
8 oz lump crab
1 cup heavy cream
3 egg yolks
1 shallot
2 tbsp white wine
1 tbsp butter
Salt, white pepper, brown sugar
Instructions
Sauté shallots in butter.
Deglaze with wine and reduce.
Add cream, fold in crab, temper eggs.
Pour into ramekins and bake.
Chill and caramelize the sugar top.
Notes
Use real crab only.
Broil sugar if you don’t have a torch.
