- 1 slice of your favorite French bread (baguette, pain de campagne, or brioche), lightly toasted
- 1 ripe avocado
- 1/2 teaspoon Herbes de Provence
- 1/4 teaspoon flaky sea salt
- A drizzle of good quality extra virgin olive oil
- A squeeze of fresh lemon juice
- Optional: Fresh chives or parsley for garnish, a pinch of Espelette pepper, a shaving of parmesan cheese
Instructions
- Toast Your Bread: Lightly toast your chosen French bread until it’s golden brown and crispy on the edges but still a little soft in the middle. Let it cool down a bit after toasting.
- Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Gently mash with a fork until you reach your desired consistency. You want some texture, so don’t overdo it.
- Season the Avocado: Add the Herbes de Provence, flaky sea salt, a drizzle of olive oil, and a squeeze of fresh lemon juice to the mashed avocado. Mix gently to combine all the ingredients and taste and adjust seasoning as needed.
- Spread the Avocado: Spread the smashed avocado evenly over the toasted bread.
- Garnish (Optional): If desired, sprinkle with some fresh chopped chives or parsley, a tiny pinch of Espelette pepper, or shave a little parmesan cheese over the top.
